Every bite of this quick and simple breakfast reminds me of 2 of my fondest memories; My mornings in Santiago, Chile, where I would be greeted with the brightest, biggest and freshest avocado’s, and my years living in New York, where I would find any excuse to stop in at my favorite small Soho spot, Cafe Gitane, to order this simple and addictive Avocado Toast.
Now, living in LA, with an abundance of fresh avocado’s, it’s not hard to recreate those fond memories. And of course, living in LA, Gluten Free Bread is a must 😉
1 Slice of Gluten Free Bread (I like Trader Joes Gluten Free Multigrain Brown Rice Bread)
1/2 a ripe avocado
Crushed Red Pepper (I also like Paprika if you don’t have this)
What to do!
- Toast your bread until its nice and crusty, almost burnt
- Mash the avocado, leaving a little chunky
- Layer Avocado on Toast
- Sprinkle with Sea Salt, Crushed Red Pepper Flakes and a drizzling of good quality Olive oil.
(if you are hungry in the mornings like me, you can also serve this with a Fried Egg on top)
